Standing loud and proud at the junction of Austin’s campy and Hispanic cultural undercurrents lies Cabo Bobs: a delectable fever dream of fast-casual Mexican dining experience not entirely unlike that of a theme park.
Meander through the entrance under multi-colored string lights and its iconic hippie van logo, where you’re guaranteed a greeting from a 30-person line snaking around dozens of framed surfing stock photos. Then, reach the front of and you’ll embark on the ride of a lifetime, replete with an assortment of homemade flavored tortillas, meats as tender as they are savory and elixirs with names like “chipotle crema” and “ancho rancho” — just remember, there is such a thing as too much lime juice.
